Eggplants got this name because there were only white color plants a few years back and white color hanging from the leaves looked like eggs so they were given the name of eggplants. The original assortment of eggplants was of white colour and it’s still the trendy number of eggplants. White eggplants are usually smaller in size in comparison with the purple variety. White eggplants have more seeds and they’re less bitter as well. Eggplants belong to the household of potato. Although varieties of eggplants range from purple to yellow to white, long purple brinjal is the most eaten variety.

How to pick a fresh eggplant for your kitchen:

• First of all, do not go for bigger eggplants since they will turn sour as the fruit matures. Choose the fruit that has more fat as compared to same size fruits. In this manner, you can have a better idea of these fruits.

• Select the one that has glossy and smooth skin because dull skin indicates that it is turning bitter. Avoid those with brownish spots. Always make certain eggplant is not dry from inside. If you hear a hissing noise from inside then do not get it.

• Turn the eggplants and look for any cuts or wrinkles or uneven skin. Wrinkles on the skin clearly indicate that it was harvest long time ago.

When the melancholy remains then it means eggplant is older.

Stem and cap ought to be bright green as it indicates that fruit is fresh. Brown stem indicates that fruit isn’t fresh.

• Eggplants get bitter with age so they should be consumed within two days after purchasing. If you would like to preserve it then freezing is the best way. Don’t store eggplants in your fridge for over one week. Eat fresh as soon as possible.
